Jollof on Campus!

Thursday 26-01-2023 - 13:16

In line with Glasgow Caledonian University’s drive for inclusivity, for the first time, African meals are being brought to campus. Diversity is one of the biggest strengths of GCU, boasting students from all around the world. We acknowledge the increasing population of African students on campus and have introduced a means of making our students, especially from that region, get a taste of home away from home. We believe this is the right time to launch this initiative and the school catering service (Baxterstorey) has agreed to introduce an affordable menu featuring Africa's most popular dishes to be made available on select days.

Jollof, Plantain and Beef

One of the most popular African dishes is the Jollof Rice. A delicacy made with rice, tomatoes, pepper, onions and local spices. The taste is yummy, and the aroma could easily fill a room with a sudden refreshment. Fried plantains are always a welcome accompaniment to Jollof. Rice is rich in carbohydrates that  helps energy levels, vitamins and animal protein from the beef. Jollof, plantain and beef promise to be such a treat to our dear African students.

White Rice and Chicken Stew

This dish certainly reminds you of Sunday mornings in Africa. A favoured delicacy of white rice and stew made by boiling    rice and frying tomatoes, pepper and other spices to make a delicious combination which is always a go to food for Africans.  This dish brings a lot of families together, ignites memories and helps our African contingent reminisce on beautiful family moments consuming this treat.

White Rice and Pepper Soup

Hot spicy pepper soup will always be a winner accompanied with boiled rice, a true reflection of our time in Africa. Pepper is one spice Africans miss the most when they move to Europe so GCU is bringing your favorite hot spicy rice and pepper soup to campus. All dishes will be made Halal.

What other delicacies would you like added to the menu?

We are having ongoing discussions with Baxterstorey on catering within GCU and would love to hear your feedback on what you would like to see in the future. Trialing new food options, which cater to different tastes, opens the conversation for more food variety on-campus.

Which other African food would you love to see on campus? Would you like to see more food from other regions featured on our menus? If so what would you like to see? Let us know!

We will be hosting a taster event for anyone wishing to try these new dishes on Monday 30th January from 3pm in the Re:Union Bar and Grill. Feel free to join us to taste what we propose to offer!
